I took a quick peek at the weather forecast for next week, and much to my dismay, the Bay Area is going to hit the high eighties again (and possibly even 90). Yipes!
I know that I have gone back to my San Francisco roots when I complain about an 80-degree heat wave. Most of you probably think that I have no business complaining. Having survived one summer in Beijing and three summers in D.C., my body should be accustomed to hotter climes, right? Nope!
Alas, without any air conditioning in my apartment, this fan is all I have to get me out of the sticky situation (literally).
To make sure that I keep calm and stay cool, I’m going to make myself a batch of this strawberry cucumber refresher.
Infusing water with a bit of fruit, lemon, and mint gives the drink a nice dose of pizzazz.
Strawberry Cucumber Refresher
Ingredients
- 2 1/2 cups water
- 2 large strawberries, sliced
- 1/4 – 1/3 large cucumber, sliced
- 1/2 lemon, sliced
- 5-6 large mint leaves
- Ice cubes, optional
Instructions
- Add the strawberries, cucumber, lemon, and mint into a jug.
- Pour water into the jug.
- Refrigerate the drink for at least 30 minutes so that the water can be properly infused.
- Enjoy chilled or with some ice cubes!

Sprucing up water with some refreshing fruits sounds like the perfect way to entice you to drink it. And therefore keep hydrated. Which is always a good thing. Love this!

These beverages remind me of Agua Fresca in a way, but I love the fresh cucumbers in water. I’m really hooked on fresh mint as well, they are very tasty in my green juices!

I’ve never tried adding mint to green juices before. I have a whole bunch of mint that I need to use up soon, and adding them to juices sound like a good idea!

Where do I get mint leaves at??

Jessica, you should be able to find mint leaves at the produce section of your supermarket. There’s usually a small area for fresh herbs. If mint leaves are difficult to find, just leave it out. The refresher will still taste good! Hope this helps!
